The fish in Iceland is just so delicious! So with a yummy selection of fresh vegetables comes this rich and delicate dinner!!
Fish Poached in a Creamy Butternut Squash Pesto Sauce
I used Haddock for this but you can use any firm fish that won’t just fall apart (so most fish)
Ingredients to serve 2 people:
1 large fillet of fish or 2 small, cut into 4 pieces
1 cup butternut squash, diced
1 red onion diced
3 cloves garlic, sliced
1 tomato diced
1 tsp capers
2 florets of broccoli, cut into small pieces
a good splash or white wine about 1/4 cup
1 tbsp pesto
1/4 c cream
Boiled new potatoes or rice and salad to serve
1. Place onions, garlic, butternut squash and capers to a hot pan with a little oil. Fry until golden
2. Throw in the tomatoes and cook a few minutes until they are soft.
3. Add fish and fry one side until starting to golden
4. Add wine and broccoli, bubble for a few min then turn fish over and add cream and pesto
5.Cook out for another few minutes, add any seasonings as desired.
6. Serve and enjoy!!!
