Green Tomato, Lemon, Honey and Ginger Drink

For starters I think it is a valuable point to note that I currently work in a tomato growing greenhouse, come cafe, come tourist destination in Iceland. It is awesome! Friðheimar.

This little creation came around from having so many excess green tomatoes at work and wondering what we could do to use them. I had this little idea in the back of my mind, just brewing for a long time until one day I decided to just go out and try it… and it was so worth it.

I have always enjoyed a fresh warm lemon, honey and ginger drink. Especially when the days are chilling and you can feel a sore throat coming along, there is nothing quite like the feeling of the lemon and ginger working their magic. I had began to wonder how it would work if I threw some green tomato into the mix and made a nice drink out of it all.

Having all the ingredients I needed readily available I gave it a whirl and the results were nothing short of fantastic. First we all tried it hot.. delicious. Then went for chilled over ice.. also delicious! We were onto a winner with this little concoction. Now it has been added to our menu and product line so everyone can always enjoy this.

Aside from this, it is a great way to use up all those green tomatoes that you never know what to do with 🙂

Green Tomato, Lemon, Honey and Ginger Drink

Here you have it…

Green Tomato, Lemon, Honey and Ginger Drink

1kg green tomatoes
500ml water
200ml honey (change depending on how sweet you like it)
100ml fresh lemon juice
1 tsp powder ginger
1 thumb of fresh ginger, fine grated

1. Place tomato, water, ginger and ginger powder into a large pot and bring to boil.
2. Add honey and lemon and cook out for a further 10 minutes.
3. Remove from heat and process with a blender until smooth.
4. You can then bottle this and it will keep if preserved properly for many months. If not keep refrigerated and it will last 1-2 weeks.

This recipe can easily be adapted to your personal tastes simple adjust the amount of lemon, honey or ginger until you achieve your desired taste.

Serving suggestions…

Serve hot on a cool winters day
Serve chilled over ice
Serve chilled with added sparkling water
Make into a healthy cocktail

    Hi Stef! This is so creative and unique! And I just know it’s delicious. I happen to have lots of green tomatoes. Btw, I’ve decided to feature this in the upcoming Fiesta Friday.     I just picked up some green tomatoes from the farmer’s market following the recommendation of a fellow vendor who just happened to try this drink during her vacation in Iceland. She told me it was the most refreshing drink she’s ever tasted. I’m so happy to have found the recipe! Thanks so much and I look forward to enjoying and sharing it.     Thank you!!! I had this on a trip to Iceland a few weeks ago and loved it. Since I came back to a garden full of green tomatoes, I thought I’d look for a recipe. I can’t believe I found the real deal!

    I have some green tomatoes and was trying to decide what to do with them. Then I remembered this incredible cocktail I had in Iceland. I can’t believe I found the recipe posted by the creator! It took a little searching because I was looking for “Happy Mary” and was just coming up with Mary J. Blige songs.
