Tatziki is a dip or sauce made from plain yoghurt, cucumber and olive oil. It is a delicious accompaniment to many dishes.

It is super easy to make Tatziki and is best to make it a few hours in advance to let all the flavours infuse. It only takes about five minutes to make and tastes so much better homemade than buying it. As with most things.

I love Tatziki, it is fresh, crunch, tangy and just goes so well with so many dishes. Pour it over grilled lamb or with chicken Souvlaki. Dollop it on top of fresh falafels or just serve it as a dip with fresh cut vegetables and breads.

There can be some different variations in Tatziki depending where you are from or what you would like to serve it with. Adding lemon for some extra zing or herbs such as mint or dill to change up the flavour a little.

1 cup thick plain greek yoghurt
1/2 cup diced cucumber
1/4 cup olive oil
1 clove garlic, crushed
salt and pepper to taste
Juice of half lemon (optional)
1 tbsp chopped fresh mint or dill (optional)

Put all ingredients in a bowl and mix together. Keep refrigerated until needed. This will keep for 2-3 days if necessary.
